I Made This Burrito for Breakfast <3

I’ve been making this burrito using different proteins, greens, and veggies, and I really enjoy it. The essential ingredients for me are avocado to give it that creaminess I love and I’m a big fan of Coyotas tortillas- they’re gluten free, made with just organic cassava flour, water, organic coconut oil, and sea salt.
I like thinking about the ingredients in terms of nutrient groups:
• Greens – support natural detoxification and add fiber
• Sweet veggies – full of fiber, vitamins, and minerals and keep you satisfied
• Proteins, complex carbs, and healthy fats – help with balanced nutrition and absorption
(I’m not adding grams of protein, fat, or carbs because we all have different needs—so make it your own)
Here’s what I used for this version:
• Greens: Kale (about 3 cups, massaged with salt)
• Sweet veggies: Red and orange bell pepper + coleslaw mix (around 3 cups total )
• Fat: Avocado

• Protein: Turkey breast
• Carb: Cassava tortilla (Coyotas)
• Optional: Jalapeño pepper sauce – I added it because I love the spice. The one from Organic Harvest Foods has a clean ingredient list and is really tasty.
I usually chop everything pretty small and mix it all together. It normally doesn’t fit into one tortilla, so I put the extra in a tupperware and eat the rest on the side.
